In 2020, Emanuele was named Best Italian Chef by Gambero Rosso.

Since 2013, Emanuele has worked closely with Carlo Cracco, first at Cracco’s Michelin-starred restaurant in Milan, and later as Executive Chef of Carlo e Camilla in Segheria in Milan. He later led the opening of OVO by Carlo Cracco in Moscow as Executive Chef, overseeing its culinary direction and development. At the end of 2020, Emanuele launched VADVARE, a gastronomic laboratory that quickly achieved national recognition. In autumn 2023, he returned to Europe to open Pollini at Ladbroke Hall in Notting Hill, London, before being appointed Brand Chef of Oltremare in Dubai later that year.
