Created by Head Chef David Chelidze, the dishes celebrate the finest of local produce, embracing the gregarious ambience of rich, diverse sharing plates found across Europe, Georgia, and Asia: a menu that is full-bodied and finely balanced, including a creative variety of khinkali - the dumplings that inspired the restaurant’s name. The bold flavours are reflected in a meticulously sourced collection of natural Georgian wines, with a focus on small producers.
This same spirit of reinvention runs through the interior design itself: countless textures and gentle curves of the tadelakt-plastered walls that complement a palette of natural wood, concrete, and metal; artfully suspended wooden branches; an open kitchen inviting guests to watch the cooking process; two custom Halo Luminaires that mimic the sun's movement from day to night.
