SAINT PETER, SYDNEY

In 2016, at twenty-seven years old, Josh and his wife Julie opened Saint Peter, a small Australian Fish Eatery. Located in the inner city suburb of Paddington, introducing whole fish cookery, Saint Peter was a highly risky venture. But together, on a small budget, the couple managed to create a bustling neighbourhood favourite. The restaurant achieved multiple awards and significant global interest within its first year. In Jan 2025, Josh and Julie opened their first hotel, ‘The Grand National Hotel by Saint Peter,’ a small 14-room boutique hotel that rehoused the Three Hatted Saint Peter restaurant. The new location boasts a chef's table, private dining room and independent bar and lounge.
