Shogo Amamoto

Chef Shogo Amamoto is widely regarded as one of Asia’s most respected sushi masters, celebrated for his meticulous Edomae-style technique and his belief that each piece of nigiri should be treated as a complete dish in itself. Born in Fukuoka, Japan, he began his apprenticeship at just 15 years old at the esteemed Kogyoku, where he developed the discipline and precision that define his work. At 23, he relocated to Taiwan to support the opening of Kogyoku’s Taipei outpost, beginning a long-standing connection with the city that would shape his career. Known for his attention to detail, he sources exceptional fish and prepares his rice with exacting care, creating a 20-course omakase that balances temperature, texture and restraint. In 2026, he brought his celebrated approach to Europe with the opening of Sushi Amamoto in Mayfair, London, his first restaurant outside Taiwan, in partnership with restaurateurs Geoff and Lucas Leong and Head Chef Jongho Park.
