This philosophy has defined Chef Shogo Amamoto’s career for over a decade, first earning two Michelin stars at his twelve-seat counter in Taipei and now guiding Sushi Amamoto London in Mayfair, his first restaurant outside Taiwan. Rooted in Edomae and Fukuoka traditions yet shaped by the best of British and European waters, his approach balances discipline with seasonality, from meticulously sourced fish to rice prepared with exacting care. In partnership with the Michelin-starred team already established at the address, the restaurant offers an intimate sixteen-seat counter experience where each piece is crafted and served directly to be eaten immediately, progressing thoughtfully from lighter to richer flavours. Designed in restrained natural materials and complemented by bespoke Japanese ceramics, the space allows the craftsmanship to take centre stage.
