Atomix and KOL Unite in London for One-Day-Only

July, 2025 - Two of the world’s most globally acclaimed culinary forces are coming together for an unforgettable gastronomic experience in London. For one day only, for one lunch and one dinner on Tuesday, August 19th, this landmark collaboration will bring together the visionary talents of Chef Santiago Lastra and Chef Junghyun Park (JP), each renowned for redefining the gastronomic landscapes of their countries through deeply personal, boundary-pushing cuisines.

Chef-Owner Santiago Lastra of KOL reimagines Mexican cuisine through the prism of British ingredients, creating a cuisine rooted in tradition and alive with innovation. The Michelin-starred restaurant celebrates the richness of Mexico’s culinary heritage while championing British biodiversity and seasonality. In June 2025, KOL was named on The World’s 50 Best Restaurants for the third year in a row.

Atomix, the two-Michelin-starred flagship of Chef JP and wife/co-founder Ellia Park, is a benchmark for contemporary Korean fine dining. Known for its precision and immersive tasting menu experience, Atomix blends culinary innovation with Korean heritage, philosophy, and impeccable design. Atomix is ranked No.12 on The World’s 50 Best Restaurants 2025, the highest ranking in the United States.

The eight-course menu will be available for lunch and dinner on Tuesday, August 19th, accompanied by pairing options from KOL’s beverage team. Highlight dishes from the Atomix team include: Gim bugak, Sea urchin, white kimchi, marigold rice and Sundubu, sweet shrimp, razor clam, chilli oil. KOL dishes will feature: Lamb rack, koji mole, oxalis and purple carrot and Birch, koji, apple, buttermilk.
