London, August 2025 — Three-Michelin-starred Hélène Darroze at The Connaught has launched her latest creations in the Taste of Summer. Light, expressive, and rooted in the finest British, European and global ingredients, this collection marks another chapter in the restaurant’s ongoing evolution under her leadership, alongside resident Executive Chef Marco Zampese, and General Manager Mirko Benzo.
Inspired by memory and terroir, the Taste of Summer is a sensual and deeply personal journey through flavour. Whether nostalgic, geographical, or textural, each creation is designed around one significant ingredient chosen for its provenance and emotional significance, reflecting Hélène’s key relationships with her producers and her sensitive approach to storytelling on the plate.
Spread over 7 exceptional courses, dishes include RED MULLET - from Newlyn near Land’s End on Cornwall’s south coast - served with fregola, Taggiasca olive, marjoram, saffron; PIGLET from Arras in north eastern France - served with cherry, black pudding, Barolo, Tropea onion, and CHOCOLATE - from Araguani in northern Venezuela - a 72% single origin dark chocolate served with cardamon, almond, cocoa bean.
Each culinary offering is flawlessly brought to life daily under the masterful hand of Executive Chef Marco Zampese. With a deep understanding of seasonality and intuitive handling of produce, Marco, who has been at Hélène’s side at The Connaught for over a decade, plays a key role in the restaurant’s evolution and consistency.
Likewise, General Manager Mirko Benzo has worked closely with Hélène for 14 years and his expertise and knowledge in the dining room is matched only by his warmth and charm. Working closely with the award-winning wine program curated by the sommelier team, Mirko’s presence ensures that each guest's journey feels effortless, personal, and perfectly in tune with the kitchen's rhythm.
